Production is the core of our company. It is there that we focus our year’s work to ensure that our products are always one step ahead of others. To understand how we produce this oil , we will list the different steps of production below:

1. Harvesting

The fully automatic harvest guarantees high quality standard from the first step of processing, which allows us to harvest with a speed all olive lands, without damaging the tree and therefore the olives. We start each campaign with the varieties that first reach the state of veraison (gradual transition from green to black), or according to the cultivar treated, focusing on the type of oil we want to obtain for our customers (Greener, fruitier…)

2. Washing

When the olives arrive at the mill, they are weighed and stored in the storehouse to be milled the next day. The washing process removes all external contamination on the drupe (soil, mud, twigs) and ensures a compliant product as soon as it arrives.

3. Crushing

It is the process by means of mechanical discs crushing the olives to obtain a dense olive paste. This is a very important step because it must first and foremost prevent the oxidation of the product through a quick and efficient process. All clearly without any contact with air.

4. Kneading

Mechanical arms that at a temperature of up to 27-28 degrees allow the paste to stir favoring the emulsification of the oil from the water. All of this takes place inside water-tight tanks that prevent the oxidation of the oil.

5. Extraction

The core of the Production. From the paste coming from the kneading process, the separation of Oil-Water and Pomace is obtained through the use of a machine called Decanter. At the end of these operations, a perfectly edible oil is obtained, but murky because it has mucilage, bubbles of air, fragments of pulp and residual water in suspension. It is therefore necessary to have a period of decantation so that all foreign substances settle to the bottom (sludge), or the time can be shortened by resorting to filtration through filtering systems of different nature and composition.

6. Storage

The storage of the product takes place inside numerous steel Silos in order to preserve the absolute quality of our oil during the months. Aware of how important it is also to ensure that our customers are able to purchase our oil throughout the year, we have provided each tank with nitrogen leaf connections in order to facilitate product storage using scientific and state-of-the-art methods.
